120g de puré de beterraba<br>
200g de chocolate com 70% cacau<br>
1 café<br>
200g de manteiga amolecida<br>
135g de farinha de trigo<br>
1 colher de chá de fermento em pó<br>
5 ovos<br>
190g de açúcar amarelo<br>

Preparação:<br>

Para o puré de beterraba coza a beterraba inteira, com casca, em água a ferver e sem sal. Escorra e deixe arrefecer sob água corrente. Descasque-as e reduza-a a puré. Pese 120g e reserve.<br>
Derreta o chocolate com a manteiga e assim que estiverem derretidos junte o café e envolva bem. Bata as gemas com a mistura de chocolate e acrescente depois o puré de beterraba. Peneire a farinha juntamente com o fermento e acrescente à mistura de gemas e chocolate. Bata as claras em castelo incorporando-lhe o açúcar e envolva suavemente no preparado anterior<br>
Coloque o preparado numa forma de bolo inglês untada e polvilhada com farinha. Leve o bolo a cozinhar em forno pré aquecido a 160ºC durante cerca de 35 minutos.<br>
O bolo deverá ficar mal cozido, para ficar com uma textura húmida e até um pouco enqueijada.<br>
